This is Steve's favorite -- it was for Lilly's 2nd birthday. The shells were made out of white chocolate and the "coral" was made in advance out of royal icing. Most of the delicate coral broke as I tried to remove it from the wax paper (that was before I became aquainted with parchment paper -- a baker's best friend!). I had originally planned to do this cake all in white, but Steve's mom thought it would look too much like a wedding cake, so I went with a peachy-pink color. It was a better choice.
